MBOAT2 selectively catalyzes the transfer of monounsaturated fatty acids (MUFAs) to lysophosphatidylethanolamine (lyso-PE), producing more cellular PE-MUFAs and therefore reducing cellular PE-PUFAs (polyunsaturated fatty acids). MBOAT2 suppresses ferroptosis through phospholipid remodeling.
