Enzyme: Pepsin & Protease XIII
Cleavage: Pepsin: Cleaves proteins preferentially at carboxylic groups of aromatic amino acids such as phenylalanine, tryptophan and tyrosine. The optimum pH range for pepsin activity is 1.0–3.0.Protease XIII: Cleaves proteins preferentially at carboxylic groups of basic amino acids (arginine, lysine, histidine). Like pepsin, Proteinase XIII is active at low pH.
