Fumonisin particularly fumonisin B1 is a mycotoxin produced by certain Fusarium species notably Fusarium verticillioides. It has a molecular mass around 721 g/mol. This toxic compound is expressed primarily in contaminated agricultural commodities especially maize and maize-based products. Fumonisin acts mechanically by inhibiting the enzyme ceramide synthase which is important in sphingolipid metabolism resulting in accumulation of sphinganine and disruption of cellular processes.
