Phosphatidylcholine (PC) is the main constituent of the plasma membrane. Generally, PC has unsaturated fatty acid, in both from human and vegetable origin. Fatty acid composition of soy PC has 70 % of linolenic acid. Hence, Soy PC has low phase transition temperature in water containing systems.
